Crock Pot Hawaiian Meatballs

Yay for easy peasy dinners that you can make ahead and let the Crock Pot do all the work! 🙌🏼 This is a recipe from my friend, Stephanie! This one is so good for how easy it is!

This is a recipe that I usually have all the ingredients on hand and every single one od my kids love it and even have them going back for seconds. I feel like it can give the taste of summer but also give that comfort food feel during the fall or winter! Basically it’s a win win! Please give this one a try and let me know what you think!

A tip for the meatballs-I love the Costco ones and just keep the big bag in my freezer at all times. I use them for so many different recipes-meatball subs, spaghetti with meatballs and so many other delicious meals but the Costco ones are definitely THE BEST! Also pineapple is one staple I keep in the cold storage, so I always have it on hand.

Ingredients:

32 oz. package precooked meatballs

13.5 oz. can unsweetened pineapple chunks (set juice aside)

1 large green pepper diced

1 cup brown sugar

2 T cornstarch

2/3 cup white vinegar

2 T soy sauce

Instructions:

1. Place meatballs in Crock Pot and top with green peppers and drained pineapple chunks.

2. In a separate bowl, mix reserved pineapple juice, brown sugar, cornstarch, vinegar and soy sauce. Pour sauce over meatballs, green peppers and pineapple. Cook on low for 3-4 hours or until heated through. Serve over rice.

  • I love any crockpot recipe (Hello who doesn’t love being able to dump stuff in a pot and leave it and come back to a ready to go meal?!). Please post more of your favorite crockpot recipes, especially Fall/winter ones (I feel like that’s when I use mine more). I love watching you cook, it’s mesmerizing and I don’t know why!

  • I have a similar recipe, but I need to try it in my crock pot some time. The original recipe calls for peppers, which I dislike so I substitute pea pods instead. Delish!

  • This is a slightly simpler version of the old Betty Crocker Waikiki Meatball recipe! Love it! These are great for events and especially kids – Just put a toothpick in the meatball and they work for appetizers or kids. You can also try them on skewers for a different look. I like the kebabs so I can do big chunks of peppers, pineapple and onion with the meatball. Love your blogs and videos!
