Cilantro-Lime Chicken and Rice

I don’t think it’s a secret that I LOVE cilantro, so when I found this recipe about a year ago I fell in love. It’s one of my favs and it’s so easy to make too because it’s a one pan meal!

I love the fresh lime and cilantro in this dish! It is quick and easy and the kids actually love it! I had only a short time between one thing and another tonight but I love that I can make a quick good meal for the kids.

 

One pan cilantro-lime chicken and rice

Ingredients:

1 lb boneless skinless chicken breasts, diced into one inch cubes

1 Tbsp canola oil

salt and pepper

2 cloves garlic, minced

1 1/2 cups low-sodium chicken broth

1 (4oz) can chopped green chilies

2 tsp lime zest

3 Tbsp lime juice

1 (14.5oz) can black beans, drained and rinsed.

2 cups minute white rice-don’t use regular rice

1/3 cup fresh chopped cilantro

Instructions:

1. Heat oil in a large skillet over medium-high heat. Once hot add chicken, season with salt and pepper, and saute until cooked through, about 6 minute, adding garlic at the last 1 minute of cooking.

2. Stir in broth, green chilies, lime zest, lime juice, black beans and season with salt and pepper to taste. Bring mixture to a boil.

3. Add rice, fully immerse rice in broth, and allow to boil 20 seconds, then remove from heat and immediately cover with a lid. Let rest 5-6 minutes.

4. Toss in cilantro and let rest uncovered for 3 minutes.

***For added yumminess add this salad dressing on top.
