Glazed Lemon Brownie Bars

I don’t know what it is but these felt a little like summer to me, maybe that’s because we had a lemonade themed birthday party for Hazyl last summer. They were moist and delicious, and suuuuuper easy to make. It was a cross between a lemon bar, a lemon poppyseed muffin and a brownie texture. They had such fun flavors and the glaze on top was so good!

In the last few years I have really found how much I love lemon things, but they have to be sweet lemon not tart. I don’t like sour or tart things, so most things I make will be sweet. This was even a treat that the kids like, it would be a great one to take to a friend to be part of a sunshine box (where a bunch of treats are yellow to brighten someones day!)

 

Like I said, this recipe is very easy. The most difficult about the recipe is the zesting part, I really dislike doing that part! 😂 Now that could be because of my not so great “zester” but the flavor that the zest brings is so good, it’s worth it. I just bought this lemon zester to make my life easier for next time. Okay enough about the tools, lets get baking!!!

Ingredients:

1 stick butter (1/2 cup) softened

3/4 cup sugar

2 eggs

1 Tbsp lemon juice

1/4 tsp salt

Zest from half lemon

3/4 cup flour

1/2 Tbsp poppy seeds

Glaze

1/2 cup powdered sugar

1 Tbsp lemon juice

zest from half lemon-If you want to calm down the tartness of this dish don’t add the lemon zest to the glaze.

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray an 8×8 glass baking dish with non stick spray.
  3. In a large bowl mix together butter, sugar, eggs, lemon juice, salt and zest. I used my Kitchen Aid and it works awesome. This attachment that I have for mine scrapes the bowl while mixing too!
  4. Add flour and mix until combined. Add poppy seeds and fold them in.
  5. Pour mixture into prepared pan and spread evenly.
  6. Bake for 18-20 minutes until the middle is set up and the edges are golden brown.

While the bars are cooling, let’s make the glaze. Combine all the glaze ingredients-powdered sugar, lemon juice and lemon zest and mix until well combined.

*If you want to tone down the lemon flavor then just mix the powdered sugar and lemon juice and pour evenly over the cooled lemon bars. Allow the glaze to set up a little then cut into squares.

Store in an air tight container.

  • Just made the lemon brownies! Amazing! Didn’t have poppy seeds but that’s ok! They worked without. Also, had to add 5min to the cook time. Adding the zest to the glaze was perfect, not too tart. It was almost 80° here in Virginia today. Great treat while being on lockdown. Y’all be safe!
