Coconut Syrup

Oh my! This syrup is out of this world. It will forever remind me of beautiful Bear Lake. We had the most delicious meals up there and one of the all time favs was this yummy coconut syrup! We had it with delicious sourdough pancakes that were to die for!  This recipe couldn’t be any easier. It takes about 5 minutes to make and it soooo easy. The only part about this recipe is you may not have buttermilk on hand.  I ended up buying a few little containers to keep on hand because I knew I would be making this again…very soon!

It has such a fun flavor to it that is sooo good. Usually with syrup it’s always maple, this just has a different twist to it that makes it delicious. We first made this when we made cloud pancakes and that was a fun combo. This last weekend we had this with just regular ol’ pancakes. It was delicious with both!

Ingredients:

1/2 cup butter

3/4 cup buttermilk

1 cup sugar

1/2 tsp baking soda

1 tsp coconut extract

Instructions:

1. Put butter, buttermilk and sugar in a medium pan. Stir over medium heat until the butter melts and the sugar dissolves. Bring to a boil for one minute.

2. Remove from heat and whisk in the baking soda and coconut extract. Mix well.
