Easy Instant Pot Salsa Chicken

I am new to the whole Instant Pot thing but lately I’ve been wanting to use it more and more so today I grabbed what I had in the pantry and made this delicious salsa chicken! It was sooo good and it made for such an easy meal that you could serve several different ways!

This salsa chicken could be served on a tortilla with some lettuce, cheese, and guac! Perfect chicken taco night! OR you could serve it over some 5 minute rice to make it a really quick dinner! I always suggest use what you have on hand first before running to the grocery store and buying more groceries!

I was in a real rut today from daylight savings and I hadn’t planned dinner yet but it was 5:30 and I needed a quick meal and that’s when I knew the Instant Pot would come to my rescue! Have you ever tried one before? I got mine at Walmart on Black Friday and it was the best purchase I’ve ever made! I found one on amazon here if you want to try one!

Easy Instant Pot Salsa Chicken

Ingredients

1 TBSP olive oil

1 TBSP garlic minced

1 pound boneless chicken breast

1/2 low sodium chicken broth

15 oz can corn drained

15 oz can black beans drained and rinsed

1 jar salsa

1 packet taco seasoning

 

Instructions

1. Heat the Instant Pot using the saute mode. Once its hot, add the olive oil and garlic. Cook until the garlic is fragrant.

2. To prevent the garlic from burning add the chicken broth. Place chicken breasts over garlic and chicken broth. Sprinkle taco seasoning over the chicken breasts and add salsa, corn and black beans. Place Instant Pot lid and secure.

3. Using the manual mode cook the chicken on high pressure for 10 minutes. Then do a quick release. Once the release has finished remove the chicken and shred and add back into the instant pot to mix all the ingredients together.

4. Serve over rice or in tortillas.

  • I have been watching your family blogs for a while and I have many easy delicious family recipes I would love to share with you guys.
    One of them is to buy 2 of the garlic and herb pork tenderloins by Smithfield. Brown them in a hot pan and place both in a crockpot. Add 1/2 cup of chicken broth and cook on low for 6 to 8 hrs. This is easy, healthy and so delicious and we love to roast veggies and little potatoes on the side in the oven! Hope you guys try this one!

    Santa brought my dad an instant pot for Christmas this year. I’d love a it if you’d make a tutorial how to use YouTube video. Dad wants me to help him use it and I’m clueless. He wants to cook pork buttons with it. Any advice or easy recipes are greatly appreciated.
