Honey-Lime and Cilantro Chicken Skewers

These little skewers, full of delicious flavor, are amazing! They are easy to whip up because they can sit in the marinade a few hours before they need to be made and can be thrown on the grill super fast. They are a fun dinner idea because for us it felt out of the norm, eating your meat off a stick and seemed really fun for the kids! They are packed full of flavor and the chicken was super moist.

We had a neighbor come over the evening that we made these and she threw her chicken on our Traeger, so we decided to throw half on the Traeger and half on the normal grill and it was fun to taste the difference. We loved them cooked both ways too! I find it so fun and interesting to cook things all different ways and to experiment with food to find all the fun combinations that make flavors have a party in your mouth!

Recipes like this that are simple are great ones to let the little kids get in and help or let the older kids do completely on their own. They might find it fun to put meat on a stick for dinner and that alleviates one thing on your to do list. Throw some rice in the rice cooker and make it a meal!

 

Ingredients:

3 Tbsp soy sauce

2 Tbsp honey

1 Tbsp vegetable oil

Juice of one lime

2 garlic cloves, minced

1-2 tsp siracha

2 Tbsp cilantro

1 pound boneless skinless chicken breasts, cut into one inch pieces.

 

Instructions:

  1. In a bowl or a ziplock bag combine all ingredients and mix well.
  2. Wash and clean chicken and cut into one inch squares.
  3. Put chicken in the mixture and allow to marinade for AT LEAST an hour.
  4. Grill on medium high heat for 6-8 minutes per side.
  5. Serve with rice.
