Tried and True Banana Bread

I have tried several banana bread recipes and they have always failed. I have been disappointed so many times…unnntillll my friend Amanda gave me this recipe and it is amazing. It turns out every time. I love to make the mini loaves and they are so cute and the perfect serving for one or two people!

Banana bread is total comfort food and for me it is a reminder of my best friend Amanda who lives in Kentucky now! It takes me back to the place we used to live in Pleasant Grove, to a phase in life that was totally different. A phase where my kids were just babies! It makes me miss it so much! Enjoy this banana bread and let it mean something new for you too!

Ingredients:

4 ripe bananas

2 eggs

1/2 cup margarine

1 cup sugar

2 cups flour

1 tsp baking soda

1/2 tsp salt

1 tsp vanilla

 

Ingredients:

  1. Preheat oven to 350°.
  2. Mash bananas in a bowl.
  3. In a separate bowl combine the rest of the ingredients.
  4. Add the bananas.
  5. Spray loaf pans, pour batter in 1/2-3/4 full and bake for 20 minutes then reduce heat to 300° and bake for an hour. This make 3-4 normal size loafs.

  • Every time you show the mini load pans I always think to myself that I want to order some. I looked on Amazon and didn’t see them. Where did you get yours? I have some, but they are individuals.

    Is the time stated above for the the mini pans or the normal pans. This is just for the varied baking time.

  • I didn’t have the mini pans so I make this recipe but I do 1 1/2 batch. (i.e.: 6 bananas, 3/4 cup butter, 1 1/2 sugar etc); and it makes 2 full size loaf pans that are perfectly moist. The baking time works out the same too.

  • I didn’t know that they were supposed to be muffins banana bread muffins when I do this recipe again I will try to do muffins but is this the same temperature for a loaf of bread which I attempted to me?

  • This is some super yummy banana bread. I made it with butter and gluten free flour instead of normal flour and margarine, and it is really good. Thanks for the recipe! BTW, love you and your family.
