Zuppa Toscana Soup

It’s fall and that usually means I’m craving soup! This is one of my very favorite soup recipes I have. I order it every time I go to Olive Garden and I was so happy to find a recipe I love and be able to tweak it just to my liking! I also love that it was a crock pot meal I could prep in the afternoon for the busy nights! Every one of the kids liked it and Branden and I went back for a second bowl.

Ingredients:

1/2 lb hot Italian sausage, casings removed

1/2 lb Italian sausage, casings removed

1 large onion

2 cloves garlic, minced

32 oz chicken stock

4 large russet potatoes, peeled and sliced

1/2 bunch kale (a couple handfuls) de-stemmed and trimmed into bite size pieces

1 cup heavy cream

2 Tbsp flour

4 slices cooked bacon, chopped

salt and pepper to taste

1 cup freshly grated Parmesan cheese

 

Instructions:

1. Heat a large sauté pan over medium high heat and brown sausage.

2.   Add  onion and cook until soft, then add the garlic and cook until fragrant. Season with salt and pepper.

3. Drain off the excess grease and add sausage, garlic, and onion to the bottom of your crockpot.

4.  Add sliced potatoes over the top of the sausage and cover with chicken stock until potatoes and sausage are completely covered . You can add water if needed.

5.  Cover and cook on low for 5 to 6 hours or high for 3 to 4 hours. Your potatoes should be soft.

 

Before serving

6.  Whisk together heavy cream and flour until mixed. Pour into slow cooker, add kale and stir to combine. Cover and cook on high for an additional 30 minutes.

7. Ladle into bowls and garnish with Parmesan cheese.

  • I make this all the time so I was curious to see your recipe. Love the idea of half hot Italian sausage / half regular! Going to try that next time. I also put a little pinch of red pepper flakes! One of my absolute FAVORITE recipes! Thanks for posting Mindy!

  • If you are doing low carb you can sub the potatoes for turnips. Be prepared though it kinda ruined it for me because when I go to Olive Garden it’s not as good I love the flavor with Turnips over potatoes now.

    This is my favorite soup from Olive Garden, as well. There are so many different copycat recipes out there, that I haven’t been brave enough to attempt to make any of them. Thank you for sharing this one. I love crockpot meals! And it’s nice to not have to blindly keep trying recipes hoping by chance to find one that’s just ok. So glad I found your vlog!

  • I love soup and this one looks amazing. A couple things form the vlogs. With is up with Ryler’s voice? It always sounds raspy or hoarse, almost like something is wrong with his vocal cords. He’s pretty young to have an issue like that but I keep noticing it when I watch. So I thought I would ask. Also from he 10/5 vlog, A suggestion for the Perler/fuse beads. We always used a pie pan to put beads in, so they are easier to sort. Makes it way easier to find the color they are looking for than in the big bin. Also we put the pattern on a cookie sheet with sides. Between these two things it contains a lot of the mess

  • I made this today and instead of kale I used fresh spinach. It was so good. My husband said this is “a do again” meal.
