I grew up eating Campbell’s tomato soup all the time. A few years back you couldn’t get me to touch tomato soup unnnntil I found this recipe! It is my absolute favorite comfort food recipe. It is so great as a main meal or pair it with a grilled cheese and it will knock your socks off!
It’s the perfect recipe for fall, I will be putting out a ton of new recipes with the cooler weather upon us! I am loving this time of year! It’s beautiful and it gives us a nice break from the heat! Give this recipe a try and let us know if you tried it and if you liked it!
Ingredients:
2 whole large cloves of garlic, minced
2 Tbsp Olive oil
2 cans(10 3/4 oz) cans of condensed tomato soup
1 can(6oz) tomato paste
1 1/2 cup milk
2 cups half-and-half
2 cups chicken stock
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
2 tsp Italian seasoning
**1 whole 9 oz package cheese filled tortellini
1/2 cup shredded parmesan cheese
Instructions:
1. Saute garlic with olive oil in a large pot over medium heat until golden brown.
2. When the garlic is done, add tomato soup, tomato paste, milk, half and half, chicken stock and spices.
3. Bring to a simmer. Once simmering, drop noodles into the soup. Cook according to package directions. About 8 minutes or until they all float to the top.
4. Ladle into bowls and top with parmesan cheese.
** As stated you can take this out and make it a dipping soup for grilled cheese OR you can add even more tortellini and make it a full meal!
