Crockpot Italian Chicken

Lately I have been feeling overwhelmed by cooking constantly, I needed the break of having this be one I could start and was away and I knew it would turn out every time. I want to appreciate and continue to love cooking, thats why crockpot meals are perfect. You get the satisfaction of making a super delicious meal without all the effort, its really a win win! I started making some bread early on in the day too so really all I had to do was show up and boil some noodles. Not to mention my house smelled good all day! It gave me back the feeling of relief as dinner comes around and not this dark cloud looming over my head and just the little refresher I needed. Crockpot meals are the bomb dot com!

This recipe is one I make if I am feeling comfort food. It is so hearty and creamy, it’s delicious!!!! It was a slam dunk for ALL the kids, which lately has been a struggle but they all loved it. I also made it a little bit more fun by using some fun colored noodles I picked up at home goods a while back and they loved that!

Ingredients:

4 chicken breasts

1 packet dry Zesty Italian dressing (regular is good too)

1 (8 oz.) package cream cheese

2 cans Cream of Chicken soup

 

Instructions:

1.  Place the chicken in a crockpot. Cover it with cream of chicken soup and the cream cheese.  Sprinkle the zesty Italian dressing over top. Cook on low for 4-6 hours.

2. Remove lid and use a whisk mix up the sauce and break up the chicken. If sauce is too thick you can use a little milk to get desired consistency. Serve over rice or noodles.

 

Sometimes we will just eat this plain or sometimes we put toppings on it. Here are some ideas for toppings:

Cheese, tomatoes, pineapple, green onions, chow mein noodles, water chestnuts, olives, mushrooms, and anything else you might like.

  • Mindy, I cooked his tonight.. delicious. I made it with a gluten free white lasagne sauce and added a chicken stock pot. I also couldn’t find the Italian dried dressing here in the UK so I used a garlic lemon and herb dried mix instead. I love your recipe ideas.
