Gingerbread Cookies

These sweet little gingerbread cookies are the yummiest and they are perfectly soft and crisp at the same time! If there is one thing that feels like Christmas it is Gingerbread houses and gingerbread cookies. These make for such a fun activity for the kids to be able to frost them and decorate them themselves. We have done these several times for Santa and the kids love it because they feel like they are making something special for him!

These are so easy to make that even your teenager could make them. I made them with my son Ryler and we had so much fun in the kitchen together. We were able to be creative and make up some fun ideas of what we wanted to do to frost them. I made a video of this that you can see here.

The one thing this recipe needs that you might not have in the pantry is molasses. I always try to keep one bottle in my pantry to have on hand for when I need it, but it’s not traditionally a staple!

This recipe is very simple so give it a go and make a small village of gingerbread men. When I say it makes a lot I mean it, you will definitely have some to take to neighbors or freeze for later!

Ingredients:

1 cup sugar

1 cup molasses

1 cup oil

1 cup hot water

2 eggs

1 tsp baking soda

1 tsp cinnamon

6-7 cups flour (more may be needed)

 

Instructions:

  1. Combine the first four ingredients and mix well.
  2. Add the eggs and mix well.
  3. Mix together baking soda and cinnamon and add to the mixture.
  4. Add the flour one cup at a time.
  5. I needed a little bit more flour, the dough should pull away from the sides of the bowl.
  6. Refrigerate the dough for at least 2 hours.
  7. Roll out with cookie cutters on a floured surface.
  8. Bake at 350 degrees for 10 minutes.
  9. Enjoy your little village!

You can make up a buttercream frosting or royal icing  to decorate these yourself or you can buy store bought frosting and dye it different colors. We had a lot of fun whipping these up in the afternoon. Let’s be honest, the kids will just pile on the frosting and sprinkles and go crazy and end up in a sugar coma!
