Crockpot Lasagna Soup

I haven’t made this soup in a little while and it was fun to have it again. All of this cold weather is making me want straight comfort food. I love lasagna and I love soups so why not combine the two?! It made for the perfect dinner tonight! Crockpot meals are so fun and easy, especially if your days are crazy busy! The week before Christmas calls for crockpot meals!

Ingredients:

1 28 oz. can of diced tomatoes

1 6 oz. can tomato paste

3 cups beef broth

1/2 lb ground beef (next time I would do 1 lb.)

4-5 cloves garlic

1 Tbsp. dried parsley

1 Tbsp dried basil

1/2 cup chopped onion

1 cup V8 juice (or any other veggie juice)

1/4 tsp. pepper

1/4 tsp. sat

2 cups uncooked pasta shells (I used medium, next time I would do 3 cups)

1 cup water (if you up the pasta, up the water)

 

Instructions:

  1. Brown the beef, you don’t need to cook it all the way through. While its browning you can chop the onion up. Drain the fat off of the meat.
  2. Mix the tomatoes, tomato paste, broth, beef, garlic, parsley, basil, onion, V8 juice and salt and pepper in the crock pot.
  3. Cover and cook on either low for 7-8 hours or high for 4-5 hours.
  4. When 30 minutes are left, add the 1 cup of water and the 2 cups of noodles. Stir everything together and put the lid back on for the rest of the cooking time!

This recipe was so easy! If I were to make this again I would up the meat to 1 lb. and up the shells to 3 cups and increase the water a little. My kids didn’t love the chunky tomatoes, so neat time I would run them through the blender!
