Tortellini Bake

This recipe saved the day the other day and the best part about it is that it can be whipped up in about 30 minutes and I usually have everything on hand for it. I was in a little bit of a pickle with a meal that I had originally planned and I got the sense that nobody wanted what I was planning on making so I decided to switch gears and do this. I’ve made this before but it’s been a really long time so I was very happy to see my family loved it as much as they did a while back when I made it. Tortellini doesn’t take very long to make and you’re really only throwing it in the oven to brown the top and melt the cheese so this really is a quick easy meal!

My kids are in a phase where all they want is pasta, pasta, pasta! Pasta with butter and parmesan, pasta and cheese and now this pasta! Now don’t get me wrong I sure do love my fair share of pasta but momma can only eat so many carbs! Tonight called for it though, it was too good!!! It’s a total comfort food dish too, so if you need something to make you feel better-this cheesy pasta dish will do the trick! I has several people send DM’s about adjustments they would make and I loved them, some suggested adding italian sausage and switching out the tomato sauce with pesto. I love taking recipes and making them my own. Give this one a try and see how you can give it a little spin to make it your own.

Ingredients:

1 bag of frozen cheese filled tortellini (about 20 oz.)

1 jar Alfredo sauce (15-16 oz.)

1/2 jar marinara sauce

1/2 cup shredded mozarella cheese

1/2 cup grated parmesan cheese

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cook the tortellini according to package directions.
  3. Mix with the Alfredo and marinara sauce in an 8×8 baking dish.
  4. Top with mozzarella and parmesean and bake for 15 minutes.
  5. Broil for 5 minutes to get a nice bubbly and golden topping.

Serve with garlic bread and enjoy!
